Vegan 2 minute Sticky Date Mug Pudding


When I was about 12 years old I went on a school camp excursion where they served sticky date pudding for dessert every night with icecream. It was from that moment that I became OBSESSED with sticky date pudding. However, since I undertook the vegan lifestyle two years ago, I have not eaten one since. I was quite happy about that as they are fattening and full of sugar but the other night I really felt like something for dessert and to be more exact, I felt like something naughty! I decided to try and make a 2 minute microwaveable vegan sticky date pudding... and OMG... this is AMAZING! It is so so so tasty and so delicious. It completely satisfies my sticky date pudding craving. I just had to share it with you! Now, I know that this is fattening and very naughty but this is a great dessert for when you would like to spoil and reward yourself ! Hehehe... tell me how it goes :)

makes 1


Pudding Mixture:
   4 pitted dried dates, finely chopped
   2 1/2 tablespoons brown sugar
   1 1/2 tablespoons plain-flavoured oil
   1 tablespoon golden syrup
   3 tablespoons self-raising flour
   3 tablespoons 
Soy Milky Lite
   Spray oil

Sauce:
   1/2 tablespoon vegan margarine, melted
   1/2 tablespoon brown sugar




  1. Lightly spray oil the inside of a mug (about a 375ml mug). Set aside.
  2. Add all ingredients to a bowl and whisk vigorously until combined and air has been incorporated into the mixture. (Or preferably, use a processor)
  3. Pour the mixture into the mug and put into the microwave.
  4. Microwave the mixture on high heat for 1 minute 45 to 2 minutes until fluffy.
  5. Add the sauce ingredients to a bowl and whisk until combined. (Double the sauce amount if you want extra goodness)
  6. Pour the sauce over the muffin in the mug. 
  7. Serve immediately and enjoy!


  • Use a knife around the side of the mug to ensure it is easily released! Or eat it straight from the mug.
  • Use a processor if you can to blend up the mixture as the air will allow it to be extremely fluffy. If you prefer not to use a processor, make sure that you whisk the mixture vigorously to allow lots of air to be incorporated into the pudding. 
  • You should be able to purchase vegan brown sugar from your local health food shop.
  • You can purchase vegan margarine from your local supermarket. If you are in Australia, Nuttelex is available from Woolworths and Coles. If you are in America, Earth Balance vegan buttery spread should be available in your local supermarket.

  2. I just made 6 of these for my family and while it might have been easier to make 1 big one for so many people, the kids really enjoyed the novelty factor of having a pudding in a mug. We'll definitely be making these again. Thanks for the recipe.

    I'm a bit embarrassed to keep asking you for "american" names for ingredients, but I'm so wanting to try this recipe. I love dates but have never even heard of a date pudding before. Do you have any idea what we might refer to the golden syrup as, over here?
    Corn syrup? Maple syrup? I don't want to make a mistake...

      Corn syrup is a different thing... I have actually never tried it but you could definitely try and use it as a substitute.

      Golden syrup is made during the refining of sugar cane and produces a thick, sweet syrup also known as "light" treacle. On the other hand, corn syrup is made through the production of corn starch and is a sweet, runnier syrup.

      If you could purchase light treacle it will be the best substitute :)

      I am also a fan of Veggieful.com from the USA. I have not made the pudding yet because I ordered the golden syrup from amazon.com rather than substitute a corn syrup mixture.   7. Oh my gosh!!! This is AMAZING! As an Aussie living in Canada, Sticky Date pudding is something I am forever craving..I just can't find it here. I have been meaning to try and veganise a recipe and make one myself.. Now I have found this little gem! Good enough to serve guests, Vegan or not!
    I am still yet to find Golden Syrup here, however, I find a blend of Blackstrap Molasses and Agave Syrup works a treat (generally half and half).
    I also put the sauce mixture in the microwave for about 20 sec to melt the sugar, then added a little splash of soy milk to give it a lovely creamy finish.

    I just attempted to make this....attempted. Mine seemed to overflow in the microwave before it was cooked. I used non-vegan products. Would this make a difference?

    1. Hello! Ours normally rise pretty close to the tops of our mugs. Maybe use a bigger mug? and check every 30 seconds or so? I am not sure how it would go with non-vegan products. Using different products could more than likely change it. Hope it works out! :)

  11. I just made these and let me say, they were AMAZING! Possibly the best sticky dates I have ever tasted! Only one problem... mine seem to keep sticking to the bottom of the mug. I spray with olive oil before I put the mixture in... but maybe I am doing something wrong? More or less oil? Or is there anything else I can use? I am new to this site and new to attempting to make the switch to vegan foods, just wanted to thank you so much for your fantastic website, it has really helped me!

  12. I saw this recipe about a year ago and am really want to make it right now so i came back to your website to find the recipe. I dont have any brown sugar at the moment. Would raw sugar work the same? I dont think it will but thought I may as well ask because someone on here might know :)

  13. Are dried dates the same as medjool dates? And could I sub maple syrup or rice malt syrup instead of golden syrup? sorry for the bother and could I sub coconut sugar or raw sugar for the brown sugar haha thanks again
