I am so excited to post this recipe of mine. I have been trying to perfect a yummy and easy vegan mayonnaise recipe for quite some time now and guess what? I believe that this is the perfect vegan mayonnaise. It reminds me so much of a caesar salad type of dressing. You would NEVER know that the main ingredient is silken tofu. I am so happy to share it with you. After I had made it, I left it in the fridge in a jar for a couple of hours to thicken up. When Jerome came home I asked him to try it and at first, he did not believe that I had made it! It is so delicious that he kept eating it with a spoon! Naughty Jerome :) Try it for yourself but make sure you leave it in the fridge for a couple of hours or so to let it thicken up and for the flavours to develop.
makes nearly 2 cups
300g silken tofu
1 tablespoon water
1/4 teaspoon salt
1 tablespoon lemon juice
5 teaspoons brown sugar
3 teaspoons dijon mustard
1 tablespoon olive oil
3 teaspoons white vinegar
- Add all ingredients to a food processor and blend until combined.
- Taste and add more ingredients to your own taste.
- Store in a jar in the fridge for a couple of hours.
- Serve with a smile and start receiving compliments for your wonderful new vegan mayonnaise.
- Letting the mayonnaise sit for a couple of hours in the fridge allows the flavours to develop and the mayonnaise to thicken up.
- You can add any other seasonings to your own desire. You could make parsley or coriander flavoured mayonnaise or add Mediterranean spices and make a spicy mayonnaise. Go for your life!
- It will last for about 3 days in your refrigerator. To be safe, I wouldn't use it for much longer than that.

Is it okay to nix the dijon mustard ? I don't live n a town where I can get it.
ReplyDeleteTry it without it. If you have any other dry mustards you could try those too. If not, just do it and see how it turns out. You may need to adjust the other items if it is a bit off balance :) Good luck! Thanks for the comment.
DeleteDo you think you could possibly freeze this and somehow have it work when thawed? Three days is not very long for storage. It sounds good but I haven't tried it yet. Thanks for this wonderful website. I have been a vegetarian for 32 years but have decided to "go all the way" and be a vegan. Hope I can -- I do love cheese!
ReplyDeleteHi Jo! I believe that you could freeze it. I froze my homemade tzatziki which is nearly the same ingredients and it was fine! With the mayonnaise I usually make it for a dish such as pasta salad or potato salad and then you can freeze the leftovers for future use. I hope you enjoy it because I love it! I bet you will feel so much better :) The 300g of silken tofu is the average size that can be bought at my supermarket (in Australia) - You should be able to find them in the cold section or if not, in health food stores. It will specifically say "silken tofu" - make sure you get that one and not "firm tofu" or "extra firm tofu". Good luck! Feel free to ask me any questions or contact me if you have any concerns :)

I made some vegan sour cream with silken tofu and it was quite good, but a little thin, so I'm just wondering about the mayo. Thanks for all your great recipes.

DeleteYou will need to buy silken 'firm' tofu which is a different type of silken tofu. It is a little bit thicker and more jelly-ish. It's not the same as normal silken tofu. I think firm tofu would not have as much liquid in it and wouldn't give it the same consistency. With the silken firm tofu, it keeps it as a such but allows it to keep its form without going runny. You should be able to buy it at your local supermarket. It will specifically say "silken firm". Thanks so much for your comment. I hope you really enjoy it :)
Though not a vegan, I do love the idea of a healthier version of mayonnaise. I cannot wait to have my husband try it too.

ReplyDeleteSince tofu is the main ingredient in this, I am not sure really what you could substitute. Unless you wanted to do it with a soy milk base. However, it will be very thin. Hope this helps!

ReplyDeleteHi there! It most definitely would. I actually used it for a pasta salad last night! Sometimes I adjust the acidity of the mayonnaise and add more mustard depending on the intended flavour of the pasta salad. I also sometimes add curry powder which makes it even more delicious! :)
