Vegan Apple and Cinnamon Wholemeal Pancakes Recipe


Ooooo pancakes, one of our most favourite breakfasts ever! But these are not just any pancakes... these are special wholemeal apple and cinnamon love-heart pancakes! As you can see from the photo, they look so impressive but are actually really easy to make. Using an apple slice as the centre of the pancake looks so cute and adds a nice sweetness and tang. Cut out the seeds from the centre of the apple in a heart shape to add extra cuteness. It is such a perfect little breakfast to make for your loved ones... just imagine their faces when you bring out a stack of love-heart pancakes. So cute hehe! Other than their sweet appearance, they are also amazingly fluffy and delicious. You may think that they won't be yummy due to containing wholemeal flour, but they are surprisingly so fluffy and light. When paired with pure maple syrup, it is definitely a delicious and decadent breakfast. Hope you love it as much as we do :)


makes: 8 pancakes (serves 2 people)
prep time: 10 minutes
cooking time: 10 minutes



Batter:
   ¾ cup Soy Milky Lite
   ¼ cup water
   1 teaspoon vanilla extract
   1 cup wholemeal flour
   2 teaspoons baking powder
   1 tablespoon corn flour
   2 tablespoons pure maple syrup
   1 teaspoon cinnamon
   pinch salt

Other:

   1 sweet red apple
   maple syrup to serve
   spray oil


  1. Cut the apple into 8 thin slices. Cut the core and seeds out in the shape of a heart and discard or eat the heart shapes. Set aside.
  2. In a bowl, add all “batter” ingredients and beat until just combined. Set aside.
  3. Spray a fry pan on high heat with oil and place the thinly sliced apple pieces in a single layer. Fry on each side for a minute or so until slightly browned. Remove from the heat and set aside.
  4. Spray the fry pan with oil again, and add one apple slice. Pour two tablespoons of the pancake batter over the apple slice. Fry for 30 seconds or so until bubbles appear on the pancakes surface. Flip and fry on the other side until both sides have browned. Repeat this step with all apple slices and batter mixture.
  5. Serve the pancakes immediately with delicious maple syrup. Enjoy!

  5. I am embarrassed to say that I used to think vegetarians were members of the lunatic fringe. I ate normally if perhaps a little excessively. By sticking with the old diet, at age 74 I had developed a heart murmur as well as gastric problems, pre diabetes and a fatty liver (although I don't drink.) It was at this point that I realised that the vegetarians and vegans I knew were far healthier than me, so I began to question my diet. I started a vegetarian/vegan diet 8 weeks ago fearing that it would be boring and flavourless. Since then I have lost my gastric symptoms, reversed my blood lipid profile normalised my blood glucose and lost 12 kg. Your recipes have helped enormously in this as they are never boring and always flavoursome. I owe you a debt of gratitude for helping me to a achieve a sustainable lifestyle modification.
