I will give you a minute to wipe away the drool dripping from your mouth... yes, you read the title correctly. These are vegan doughnut muffins! They taste EXACTLY like hot, fresh doughnuts with the hit of cinnamon sugar and doughy goodness. Trust me, you will LOVE these.... you will also probably be known as the "best cook in the world" by your vegan and non-vegan friends. No longer will you be deprived of the world of doughnuts! When I was about 15, I had my first retail job. I worked near a donut store who at the end of the day would give away all of the unsold donuts... as soon as my three hour shift finished, I would take a whole box and eat them on the way home! This was obviously in my non-vegan and don't-care-about-my-health days haha. Anywho, lately I have been thinking that we just had to make a vegan doughnut recipe. Strangely enough, my Nanna made and brought over some vegan dougnut holes the other day and my goals were set for the day... MAKE DOUGHNUTS FOR VEGGIEFUL! So, here they are! Thank me later :)
makes 24
batter:
1 cup flour
2 teaspoons baking powder
pinch salt
1/2 cup white sugar
1/4 cup plain oil
3/4 cup plant milk (such as Soy Milky Lite)
1 teaspoon vanilla extract
1/2 tablespoon apple cider vinegar
pinch nutmeg
for rolling:
margarine
cinnamon
sugar
batter:
1 cup flour

3/4 cup plant milk (such as Soy Milky Lite)
1 teaspoon vanilla extract
1/2 tablespoon apple cider vinegar

margarine
cinnamon
sugar
- Preheat oven to 180 degrees celsius and spray a 24 hole mini cupcake tray with oil (I use spray coconut oil).
- Beat all 'batter' ingredients until smooth.
- Pour the batter into the mini cupcake tray.
- Bake for 8 to 10 minutes until lightly browned on top.
- While the muffins are still warm, lightly roll each one in melted margarine and then roll in a mixture of cinnamon and sugar (about 10 parts sugar to 1 part cinnamon). Set them aside.
- Eat immediately and be amazed!

DeleteWhat do you mean by plain oil? Is that like olive oil or canola oil? And also, would I be able to substitute it with coconut oil?
