So, get your bed and netflix ready for a cosy night in with one of our amazing cheese and bacon toasties. Yum yum!

MAKES 2 TOASTIES

Bread:
4 pieces of bread

Cheese:
1/2 cup plant milk
1/8 cup nutritional yeast
1/8 cup raw cashews
big pinch salt
big pinch garlic powder
1/2 tablespoon lemon juice
1/4 tablespoon corn flour
pinch turmeric

Bacon:
2 thin slices of Tofu (cut as thinly as you can)
1/2 teaspoon Smoked paprika
big pinch Salt
1/2 tablespoon Maple syrup
1/2 tablespoon oil

  1. Put all “cheese” ingredients into a blender and blend until smooth and combined.
  2. Pour the blended cheese into a pot on high heat. Whisk, and bring to the boil.
  3. Take off the heat and allow to thicken. Set aside.
  4. In a bowl, add the two pieces of thinly sliced tofu and the rest of the “bacon” ingredients.
  5. Toss until coated.
  6. Pour into a fry pan on high heat and fry until browned and crispy.
  7. Divide the cheese and tofu between the bread and form toasties.
  8. Place into a toasted sandwich maker or in a frypan until browned.
  9. Slice, and serve immediately. Be careful, as it will be REALLY hot.
  10. Enjoy.

  • Feel free to pre-soak your cashews if your blender is a bit dodgy. If you have an insanely powerful one like a Vitamix, you won't need to.

The nutrition information above is an approximate guideline. High in iron, high in niacin, high in phosphorus, very high in riboflavin and high in thamin. Plus, very very high in yummy.
