Vegan Granola Cereal Recipe


If I had to name this beautiful creation something, it would be called 'The Best Cereal in the World' because it seriously is the best cereal in the world. I know that there are heaps of granola and vegan cereal recipes on the internet but this one is the BEST. This recipe was created and given to me by my Mum and my Stepdad Mike who pressured me to make it for a long time. I just wasn't overly excited about making "granola" as it didn't sound exciting... However, the first time I made it my eyes were opened up to the land of tastiness and I shall never go back to the granolaless life. Jerome loves it so much that one day he ate it for breakfast, lunch and dinner! Such a naughty boy. Mum and Mike make this every week just as I do now... They are really into their outrigging and get up at 4 or 5 am every morning to hit the ocean and paddle with their friends and the dolphins. Every morning I get a call from my mum telling me about the fish, jellyfish, dolphins and whales that they see on their ocean quests. It is really amazing... and yes, I do feel a little bit jealous heh.

Anywho, the granola looks really nice stored in a glass jar. It would actually make a really nice present too with a little bit of twine tied around the jar or a little brown gift tag. The good thing about this is that you can use any nuts or dried fruit that you have in the pantry. So go 'nuts' and make your own bowl of sweet, delicious goodness.

 
makes about 5 cups


    2 cups rolled oats
    1 cup roughly chopped dried fruit (I used dates and raisins)
    1 cup roughly chopped nuts (I used cashews and walnuts)
    1 ¼ cups desiccated coconut
   
    good pinch of salt 

    3/4 cup maple syrup
    ¼ cup water


  1. Preheat oven to 150 degrees celcius (fan-forced) and line a baking tray with baking paper.
  2. Pour the oats onto the baking tray and bake for 10 minutes or so until slightly toasted.
  3. Take the oats out of the oven and pour into a large bowl. 
  4. Increase oven heat to 180 degrees celicius and re-line the baking tray with the same or new baking paper.
  5. Add the dried fruit, nuts, coconut and salt to the bowl with the toasted oats. Mix together until combined.
  6. Add the maple syrup and water to the bowl and mix until evenly combined. 
  7. Pour the granola mixture onto the baking tray and spread out evenly with a spoon. 
  8. Bake for 20 minutes or so until browned on top, stirring once.
  9. Take out of the oven and let it sit without touching it for 20 to 30 minutes until cooled. (The mixture will still be soft at this stage)
  10. Once completely cooled, carefully store and spoon into an air-tight container (try to keep the granola in clumps and clusters)
  11. Serve with soy milk, vegan yoghurts or whatever you like! Eat for breakfast, lunch and dinner! :)

  • Add any fruits or nuts that you have in your pantry. Do as your heart desires!
  • Try to carefully spoon the granola into your jar or container so that some bits are kept in clumps. The clumpy mouthfuls are delicious!

    1. Hi Stephanie! Thanks so much. You can use any plain-flavoured oil. Such as vegetable, canola, sunflower or anything you have on hand! You could even use coconut oil for a yummy coconutty addition!

    1. Hi Stephanie, I don't consume honey due to my vegan lifestyle but I am sure that it would work the same. You probably won't need nearly as much as the recipe says if you are using honey. Honey is a lot stickier so just try it out and see :) Hope you enjoy it!!

    vegeterian) - sorry!
    It's a pitty that maple syrup is that expensive - about 15 US $! - I really would like to try your
    original recipe! As I am originally from Germany I will buy it over there the next time and bring it
    to Brazil ;)

    1. Hello! It should last for a few weeks when kept sealed in an airtight container... it always lasts for ages here! But it could depend on the weather too. Hope you enjoy it :)
