Falafel Style Veggie Burger Recipe

I have been on the ultimate quest to make the perfect veggie burger. For months and  months I have travelled the land to create a delicious falafel-style vegetable-based patty. Finally! I have made it. I think this is the yummiest veggie burger I have EVER had/made! Basically it is a tabbouleh, tzatziki, salad and veggie turkish burger with a side of homemade chips. With all of those delicious components, how can it not be good?

It really reminds me of vegetable pakoras that you can buy from Indian restaurants... they are so tasty. I also made some tabbouleh and vegan tzatziki to go with it. The tzatzki and veggie patty go together like a horse and carriage... yum yum yum. I hope you all enjoy this recipe. But please don't be intimidated by the number of condiments, you can use whatever condiments you desire... but the following are my suggestions:)

Veggie Burger Patty:
    1 onion
    2 cloves garlic
    1 tablespoon oil plus more for frying
    1 can chickpeas 400g , drained and pureed
    ½ cup fresh parsley leaves, chopped finely
    1 teaspoon dried coriander
    1 teaspoon dried cumin
    1 teaspoon curry powder
    1 teaspoon dried turmeric
    ¼ teaspoon paprika
    1 tablespoon fresh lemon juice
    1 tablespoons flour
    2 cups fresh breadcrumbs
    1 tablespoon sesame seeds
    ¼ cup fresh mint leaves, chopped finely
    good pinch of salt
    good pinch of freshly cracked black pepper

    6 Turkish rolls, toasted
    Vegan Tzatziki*
    A couple of handfuls of rocket
    Canned or freshly sliced beetroot
    1 onion, thinly sliced in rings and browned
    Sweet potato and potato oven chips (optional)

  1. Make veggie patties - Sauté onion, garlic and oil in a pan until onion has browned and garlic is fragrant. 
  2. Add all ingredients to bowl and stir to combine.
  3. Form 6 balls out of the dough and roll them in your hands for a while until completely round and formed together.
  4. Flatten each ball of dough into a patty as flat as you can make it.
  5. On high heat, fry each patty in 1 tablespoon of oil for a couple of minutes on each side until browned and the outside has become crispy. Set patties aside.
  6. Serve on toasted turkish bread with vegan tzatziki, rocket, beetroot, browned onions and a side of oven chips and tabbouleh. 

  • *You can purchase store-bought tabbouleh and vegan tzatziki if you are short on time.
  • Oven chips with the veggie burger add that extra fun and rustic touch!
  • If your veggie patty is too crumbly, add it back to the mixture with a little bit of water or a little bit more oil and start forming 6 balls and flattening again. The veggie burgers should not be crumbly but do this if they are :)

  5. The recipe is amazing!! Just whipped up a batch...but mine were a little crumbly when I was forming them into patties. Any tips on how to make sure the next time I make them, they will stick together? Not sure where I went wrong hah!

      Rocket aka roquette is a type of salad leaf with feathered and flat leaves. It has quite a bitter and peppery taste. If you don't have any rocket, you can just substitute any of your favourite salad leaves such as baby spinach or iceberg lettuce etc... :) I hope this helped!

    1. Hello! I am so glad that you enjoyed it and I wonder why it is too dry?? I make this quite regularly and it has never been dry for me. Its great that your husband really liked it too! That is always a nice feeling hehe :)

  9. Oh wow!!! I absolutely adore Turkish cuisine ... one of my all-time favourites is my home-made falafel wrap, which is relatively similar to your one!
    I get Turkish bread, and then spread some baba ghanoush on both sides, and a sprinkle of lemon juice. Then I chop up cucumber and tomato and put it in, finally slightly crumbling some warm falafels onto it.
    Sometimes I add some home-made tabbouleh but often I can't. Plus a streak of some spicy sauce on it every now and then never goes amis.

  10. Nicest veggie burger I have had in my whole life. I have had 10 years experience with veggie burgers and this was wonderful. Adding a thin layer of oil to fry the burgers makes it so yummy and holds them together. Thanks :D
