Vegan Banana Bread Recipe

Bananas have been so cheap lately so I bought way too many and then had a bunch of overripe bananas sitting in my kitchen. I was wondering what to do with them so I  decided to make up my own banana bread recipe. If I can say so myself, this is the BEST banana bread I have EVER had! It was so yummy and stayed moist for the next couple of days. I really loved it. As I am writing this I have my second batch in the oven. Ever since I made this the first time, Jerome constantly asks for me to make it again and again. It really is delicious :)

I just realised that the second batch I just made, I used plain flour rather than self raising flour. *smacks forehead* - I knew that I did something wrong! Grrrrr... I was too distracted listening to music. I wonder how this one will work out now hahahahaha >.<

I guarantee that you will love this vegan banana bread/cake recipe!

makes 1 loaf

2 cups self raising flour
1/4 cup vegan margarine, melted
1 cup brown sugar
1 cup coconut milk*
1 cup mashed banana

1/2 teaspoon vanilla essence (optional)

  1. Preheat oven to 180 degrees celcius (fan-forced) and oil a bread tin (approx. 22cm long x 13cm wide x 7cm deep)
  2. Add all ingredients into a bowl and stir vigorously until very smooth.
  3. Pour banana bread mixture into the oiled tin.
  4. Bake for 1 hour or so until top has browned and a skewer poked in the centre of the loaf comes out clean.
  5. Serve warm. Spread with vegan butter and eat eat eat!

  • *I use canned full-fat coconut milk.
  • Purée the banana if you want the banana taste to be equal throughout the bread. Or if you would rather chunky bits, just mash the banana.

The nutrition information above is an approximate guideline and does not include the "optional" ingredients.

  3. Maddi, If i am out of margarine, can i use olive oil instead to make your lovely banana bread? xxx

    1. I am not sure as the oil may make the bread more slick and greasy. The margarine is oils combined with other ingredients which give a creamy consistency and may solidify a little bit when cooking. Also, olive oil is very strong and may make the banana bread taste like olives haha. Use coconut oil? I would probably wait until you had some soy spread or earth balance.

    2. I make a vegan banana bread with olive oil and it works out just fine, it's pretty similar to your recipe but instead of brown sugar I use powdered. Also if you go with a good brand of olive oil you are putting in food that is not as processed which is always a plus.

    4. Extra Virgin Coconut Oil is a great vegan butter substitute! (And the flavor it brings to the recipe is just an added bonus!)

  4. Hi Madison! When you say coconut milk for this recipe, do you use the full-fat version out of the can, or do you use it out of the container (like a soy or almond milk)? I made this the other day with the coconut milk from the can and it was deeelish! But just wanted to see which kind you meant :-)

    1. Hi Kori!
Yes, I use the full-fat coconut milk out of the can. You are doing it right! I am happy that you really liked it because this banana bread is a staple in my house hehe. I try not to eat it too often because it isn't very good for us... but it is so delicious! Such a temptation to make it every day :D

  7. I made this today, so yummy!!! I used 3 bananas and about 1 1/3 cups of coconut milk. My son licked the entire bowl. Seriously better than any non-vegan banana bread, which i've made plenty of times. Thank you!

  11. Hi Madison! :)
I made this last night and it is delicious. However I think I may have brought it out of the oven too early. :P I was wondering, if it would be possible to swap the coconut milk for Almond or Oat milk?
I love your site, I'm making your brownies tonight for my youngest brothers birthday party tomorrow evening and I'm super excited to try them (if a little worried I'll eat them all before the party). ^.^

Hope you and Jerome are well.

I am so glad that you liked it. You could try it... however, the coconut milk adds a nice thickness and oiliness.

Oh yay! I hope you enjoy the brownies... I love them!!

  12. Wow wow wow this bread is amazing! I made the Granola yesterday, and tonight at 7.30pm decided I had to make the banana bread for an after tea snack! So so good, I substituted the flour for a gluten free SR flour as I am gluten intolerant and it was just delicious. Couldn't be happier, Maddison your recipes are incredible.

  18. I'm so excited for this! I've just started eating vegan (2 days lol) but last night my son said he wanted to go vegan too. I want to show him that you can have yummy food and it still be vegan (and also he is 5 so something like this as a little treat in his school lunch will show everyone that the little dude is not missing out)

  20. Hi Madison, I baked this loaf yesterday and served it at a brunch party. It was quick to prepare and the loaf was dense and delicious! It was thoroughly enjoyed by both vegan and non-vegan guests. I substituted the margarine with coconut oil and pureed an extra banana as my batter was a little dry. Will definitely make this again. Thanks for the recipe.

  21. Madison, your Banana Bread Recipe is truly amazing. I have made it so many times for my Husband & myself hoping to freeze slices to try the next morning in the toaster...........but it never lasts that long. My three Daughters & their Families all love it too. It would be the lightest, moist Banana Bread I have ever had the pleasure to taste. Your Recipes are all wonderful. I am trying each & every one of them. Christine

With these added extras, this banana bread is even better the next day.
Might add a caramel swirl next time :D
