Vegan 4 Ingredient Scone Recipe

 

I was quite overwhelmed at the thought of creating a vegan scone recipe... I had no idea how it would turn out. However, the result was a decadent, fluffy, delicious scone consisting of only 4 ingredients! I was so excited and still am! It is so nice to know that we now have a simple and amazingly tasty scone recipe under our belt. Hello Mothers Day, birthdays and morning teas... a recipe for all occasions! It seriously tastes like the original scone recipe I loved as a child. We know you will love it... Enjoy.

makes 12



Scones:
3 cups self-raising flour
120g vegan margarine, at room temp.
1 cup soy milk
1 tablespoon icing sugar

Optional extras:
strawberry jam
whipped coconut cream
icing sugar, to dust


These are Australian measurements. 1 cup = 250ml and 1 tablespoon = 20ml.


  1. Preheat oven to 200 degrees celcius fan-forced and line a tray with baking paper.
  2. In a large bowl, add the flour and icing sugar and stir until combined.
  3. Add the margarine and use your fingers to rub it into the flour until lightly crumbly.
  4. Pour the soy milk in and knead until a dough is formed.
  5. Lightly sprinkle a surface with flour and knead the dough for one minute until a smooth dough has formed. Make sure you do not over-work the dough.
  6. Roll the dough into a long sausage and cut into 12 parts/scones. Or, you can use a circular cutter and cut into 12 rounds.
  7. Place the scones on the tray with a little bit of space between each one.
  8. Bake for 20 minutes until lightly browned.
  9. Serve immediately with jam and vegan cream. Enjoy!

  3. I knew it!!! I'm guessing another girl but I'm hopeless at guessing babies genders-except when I was pregnant with my little Mia-I was certain I was having a girl. Congratulations-I hope you're feeling well.

    This recipe is eerily prescient - I've been trying for a month now to perfect my scones. Can't get the buggers to rise. Tried everything - tying tiny kites to them as they cooked, using cocaine instead of flour, couldn't get them very high at all. Thought it was the melting chemistry of butter vs margarine for a while, now I think I might have been cursed by a healthy witch. Will try these and let you know how they go.

    Thank you for cheering on this conscious lifestyle!
    Sugar (especially white and icing) is harmful for one's health and you may consider using more natural and less processed sources (stevia, organic cane sugar, maple syrup). Coconut oil is also a good addition in the making of scones (and adds a sweetness).
