Vegan Avocado Pesto Pasta Recipe


 I love this dish. It is one of the easiest but yummiest pastas you will make... It is a raw pesto sauce which makes it 10x easier. I always get great satisfaction knowing that you have made a delicious dish that only takes 10 to 20 minutes. You can practically have everything ready in the time you have cooked the pasta. I love the garlicy, basily and lemony tastes that go SO well with the avocado cream sauce. It seriously tastes so creamy. This is my favourite pasta dish so far... But, I am a lemon and garlic fanatic.

This dish has become a weekly staple for Jerome and I due to the tastiness and the ease of cooking. It one of those meals I make when meat-eaters come to stay over as it allows me to flaunt yummines of vegan cooking and allows me to stay happy and not stressed in the kitchen. I tend to get stressed when I have people over for dinner due to the pressure and I always worry that the meal wont work out. But seriously, for some reason, whenever someone comes over for dinner the dish NEVER works out hahaha! Does this happen to you? Well, I hope you enjoy our avocado pesto pasta. Enjoy :)

11/12/2012 update - I have actually changed the recipe... quite a lot. I think this new version is 100% more delicious and is quicker with less ingredients. Enjoy! 


 serves 4

Sauce:
    2 medium avocados (400g)
    2 large garlic cloves
    1 cup tightly packed basil leaves
    salt and pepper
    4 tablespoons fresh lemon juice
    1 tablespoon olive oil

Other:
    500g pasta of choice
    2 handfuls of cherry tomatoes, halved
    lemon wedges to serve
    fresh basil leaves to garnish
    vegan parmesan cheese


  1. Cook pasta according to packet instructions. 
  2. Add all of the sauce ingredients to a processor and process until smooth. Taste and season with more salt and pepper if needed. Set aside. 
  3. Drain pasta and add to a large bowl. 
  4. Add the sauce and cherry tomatoes. Toss to combine.
  5. Serve immediately with parmesan cheese, basil leaves and lemon wedges.


  • Still tastes delicious the next day although the sauce will slightly brown due to the avocado... but it still tastes amazing!
  • Serve this dish immediately to your guests while the colour is still beautiful and green!
  • The lemon juice adds flavour to the dish and also helps prevent the avocado from browning.
  • Taste and season with more salt and pepper if needed.

  3. Hey madison..I heard about a tip to cook with avocado..it may work with your pasta too. Leave the avocado stone in the pasta/sauce container and the avocado won't brown. Just remove the stone before you serve and it'll remain fresh! :)

    Not sure if it will work for pasta..but definitely works for guacamole!!
